This is not the case. Within 55 minutes you can be enjoying great cranberry coconut bars for dessert. You will be done in under an hour, and your guests will think you spent all day. There is no better trade off. So lets get to this great dessert.
Ingredients For Cranberry Coconut Bars
2 cups of fresh or frozen cranberries. No canned cranberries.
1 cup of dried and sweetened cranberries.
1/4 cup of water
2/3 cup of raw sugar. This type of sugar is not processed and is found in most supermarkets and specialty stores. It is a much healthier option than refined granulated sugar.
Grated peel of 1 lemon. This will give the cranberry coconut bars a nice zest.
3/4 cup of old fashion oats.
1 1/4 cup of Whole Wheat flour and unbleached white flour mixed.
1/2 teaspoon of baking soda
1/2 teaspoon of salt
3/4 cup of dairy free margarine, softened. If you use margarine sticks, then 1 1/2 sticks of dairy free margarine.
1 cup of packed brown sugar
1 cup of coconut flakes
1 cup of toasted pecans chopped up. To toast the pecans, spread a single layer on a baking sheet and bake at 350 degrees for 5-7 minutes. Or until the pecans are golden brown. Stirring frequently.
Now this cranberry coconut bars recipe has four easy steps.
Step 1 – Preheat your oven to 400 degrees. Then grease and flour a 13 x 9 inch baking pan.
Step 2 – Combine the dried cranberries, fresh cranberries, raw sugar, water and lemon peel into a medium sauce pan. Then cook the mixture over medium to high heat for 10-15 minutes or until the cranberries begin to pop. Make sure to stir the mixture frequently. Then mash the cranberries with the back of a spoon and let it stand for 10 minutes.
Step 3 – Now combine the oats, flour, salt and baking soda in a medium bowl. Beat the margarine and brown sugar in a large bowl with an electric mixture at medium speed. Do this until the mixture is creamy. Add flour mixture and beat of mix until blended. Then stir in the pecans and coconut. Reserve 1 and 1/2 cups; press the remaining crumb mixture into the bottom of the prepared pan then bake for 10 minutes.
Step 4 – Very gently spread the cranberry filling evenly over the crust. Then sprinkle the reserved crumb mixture. Then bake 18-20 minutes or until the center is set and the top is a golden brown. Completely cool the finished product and cut into bars.
