Mac and Cheese – Dairy Free

mac and cheeseMac and cheese is a staple at any family gathering or event. With the holidays just around the corner the must have dish is sure to pop up. But if you want to do a dairy free mac and cheese this time around, you came to the right place. The mac and cheese recipe is very simple and has only three steps. the key to a great mac and cheese recipe is not just the mac and cheese but the spices you and and don’t add. This can and will make or break the dish.

So let’s get started with this great dairy free mac and cheese dish.

Ingredients

1 1/2 cups of uncooked elbow macaroni. you could use another shape if you desire.

1 cup of chopped onions

1 one cup of red and/or green bell peppers

3/4 cup of chopped celery

3/4 cup of nutritional yeast

1/4 cup of all purpose flour

1 1/2 teaspoon of salt

mac and cheese11/4 teaspoon of garlic powder

1/4 teaspoon of onion powder

2 cups of unsweetened soy, almond, cashew, or rice milk

1 teaspoon of yellow mustard

3 drops of hot pepper sauce. This is optional to add some heat.

1/2 teaspoon of paprika

Step 1. Your first step in putting the ingredients together for this mac and cheese dish is to preheat the oven to 350 degrees. Next spray a 13 x 9 inch baking dish with Pam spray or any nonstick cooking spray. Then Cook the macaroni according to the instructions on the box. Then add the bell peppers, onions, and celery during the last 5 minutes of cooking. Drain off the water and return the contents to the saucepan.

STEP 2. While this is happening, combine the nutritional yeast, salt, flour, onion powder, and garlic powder in a medium saucepan. Whisk in the soy milk over medium heat until it is smooth. Add the mustard and hot pepper sauce. Continue to whisk for about 10 more minutes, or until the mixture thickens to your liking. next pour it over the macaroni and mix well.mac and cheese2

STEP 3. Spread the mixture in the prepared baking dish and sprinkle with paprika. Put in the preheated oven for 15 to 20 minutes or until it is heated all the way through and a light brown crust develops.

This great mac and cheese dish serves about 4 to 6 people. So the next time you through a barbecue, or get invited to dinner, break this dish out. You will be the hit of the party with this totally vegan mac and cheese dish.
